Simple Fenugreek (Methi) Vegetable Recipe

This simple fenugreek vegetable recipe is a delightful blend of earthy fenugreek leaves (methi) and tender potatoes, seasoned with aromatic spices like cumin, garlic, and chilies. Perfect for a comforting meal, the dish balances the slightly bitter taste of fenugreek with the mild, starchy flavor of potatoes. Quick and easy to prepare, it’s a healthy and flavorful option that pairs beautifully with roti, paratha, or rice. Rich in nutrients like iron, calcium, and vitamins, this recipe not only satisfies your taste buds but also provides numerous health benefits, making it a must-try addition to your winter menu.

Ingredients:

• Fresh fenugreek leaves (methi): 2 cups (chopped)

• Potatoes: 2 medium-sized (peeled and diced)

• Oil: 2 tablespoons

• Cumin seeds: 1 teaspoon

• Garlic: 2-3 cloves (chopped)

• Green chilies: 2 (optional, chopped)

• Turmeric powder: 1/2 teaspoon

• Red chili powder: 1/2 teaspoon (optional)

• Salt: to taste

Instructions:

1. Prepare Fenugreek Leaves:

Wash the fenugreek leaves thoroughly under running water to remove any dirt. Chop them finely and set aside.

2. Heat Oil:

In a pan, heat the oil on medium flame. Add cumin seeds and let them splutter.

3. Add Garlic and Green Chilies:

Add chopped garlic and green chilies to the pan. Sauté for a minute until aromatic.

4. Cook Potatoes:

Add the diced potatoes to the pan. Sprinkle turmeric powder and salt. Mix well and cook covered for 5-7 minutes until the potatoes are soft. Stir occasionally to prevent sticking.

5. Add Fenugreek Leaves:

Add the chopped fenugreek leaves to the pan. Stir well so they mix with the potatoes.

6. Season and Cook:

Add red chili powder (if using) and adjust salt as needed. Cook uncovered for another 5-7 minutes until the fenugreek leaves are cooked and the flavors blend.

7. Serve:

Remove from heat and serve hot with roti, paratha, or rice.

Tips:

• To reduce bitterness, you can sprinkle a little salt on fenugreek leaves, let them sit for 10 minutes, and then rinse them before cooking.

• You can add tomatoes or onions for variation.
