Ingredients

  • For the Chicken:
  • 2 large chicken breasts (boneless, skinless)
  • 2 tbsp olive oil
  • 1 tbsp soy sauce (low sodium)
  • 1 tsp honey or maple syrup
  • 2 cloves garlic (minced)
  • 1 tsp smoked paprika
  • 1 tsp ground cumin
  • 1/2 tsp black pepper
  • 1/2 tsp salt
  • Juice of 1 lemon
  • For the Rice:
  • 2 cups cooked jasmine or brown rice
  • 1 tbsp olive oil
  • 1/2 cup chopped cilantro
  • Juice of 1 lime
  • Salt to taste
  • For the Toppings:
  • 1 cup steamed broccoli
  • 1 cup sliced cucumbers
  • 1/2 cup shredded carrots
  • 1/2 cup sliced avocado
  • 2 tbsp sesame seeds (optional)
  • Optional Dressing:
  • 1/4 cup Greek yogurt
  • 1 tbsp lemon juice
  • 1 tsp olive oil
  • Salt and pepper to taste

Instructions

Marinate the Chicken:

    • In a bowl, whisk olive oil, soy sauce, honey, minced garlic, smoked paprika, cumin, black pepper, salt, and lemon juice.
    • Add the chicken breasts and coat them evenly. Let marinate for at least 15 minutes (or up to 2 hours for deeper flavor).

Grill the Chicken:

      • Preheat a grill or grill pan over medium-high heat.
      • Cook the chicken for 6-8 minutes per side or until the internal temperature reaches 165°F (74°C).
      • Remove from heat, let rest for 5 minutes, and slice into thin strips.

Prepare the Rice:

    • Toss cooked rice with olive oil, chopped cilantro, lime juice, and salt.

Assemble the Bowls:

    • Divide the cilantro lime rice among 4 bowls.
    • Arrange grilled chicken strips, steamed broccoli, cucumbers, shredded carrots, and avocado slices on top.

Optional Dressing:

    • Mix Greek yogurt, lemon juice, olive oil, salt, and pepper in a small bowl. Drizzle over the rice bowls or serve on the side.

Garnish and Serve:
